Did you know ?
-- that a single Brazil nut contains about an entire day's recommended
supply of selenium?

Selenium is a trace mineral that works hand-in-hand with vitamin E as an
antioxidant. People with Parkinson's need these antioxidants to combat
free radical damage.

The RDA for selenium is 55 mcg, and Brazils contain about 70 mcg. They?re
also a good source of vitamin E.

Unless you're allergic to them, consider having a Brazil nut daily -- preferably raw, because roasting destroys some of that precious vitamin E.



How to crack a Brazil nut?

According to the Diamond of California website:

There are two methods to crack Brazil nuts and get a non-broken kernel.

(1) Freeze the nuts 24 hours prior to cracking -or-
(2) Cover nuts with cold water. Boil for 3 minutes, drain. Cover with cold
water; let stand for 1 minute, drain and crack.

The Cook's Thesaurus says:

They're prone to rancidity, so store them in the refrigerator or freezer
if you plan to keep them for awhile. It's easier to shell them if you
first heat them in a 350° oven for about 15 minutes.

Because heat destroys some of the vitamin E, the freezing method would be
preferable.
